From the Director
Dr. Ann Vail Spring break has come and gone and the semester is moving quickly. Thankfully spring weather has also arrived. The first three months of 2015 have been very busy in the School of Human Environmental Sciences! New grant projects have been announced, new faculty and staff have joined our team and our students have been working diligently in their classes and student organizations. We are pleased to share with you news from the first quarter of 2015 as well as information about upcoming events.

USDA partners with UK to establish national Rural Child Poverty Nutrition Center

Photo On March 19, Agriculture Secretary Tom Vilsack joined Kentucky Governor Steve Beshear and Dean Nancy Cox to announce the establishment of the USDA Rural Child Poverty Nutrition Center at the University of Kentucky. Dr. Ann Vail, Director, School of Human Environmental Sciences, serves as the principal investigator for the project, and is joined by faculty and staff from the Departments of Family Sciences and Dietetics and Human Nutrition.

Applications available for Kentucky military family camps

Photo This summer, military families can have a great bonding experience at one of three Kentucky camps aimed at strengthening family ties in a fun-filled atmosphere. The camps are part of two grants that the University of Kentucky Cooperative Extension Service received from the U.S. Department of Defense and Kentucky's System to Enhance Early Development.

Nutrition education program unveils new healthy eating license

Photo Billboards featuring a wildcat dressed as a superhero have popped up all over the state. The billboards are part of the U.S. Department of Agriculture's "Snack Like A Superhero" promotion. "The goal of the campaign is to help limited-resource families choose nutritious options," said Debra Cotterill, director of the Kentucky Nutrition Education Programs with the University of Kentucky Cooperative Extension Service.

Kentucky House and Senate honor Family and Consumer Sciences Extension

On February 3, the Kentucky House of Representatives and the Kentucky Senate recognized and honored the Family and Consumer Sciences Extension Centennial. Family and Consumer Sciences Extension agents, along with FCS administrators and state staff, were recognized on the floor in each respective chamber. Special thanks to Representative Rita Smart and Senator Paul Hornback for spearheading the recognitions.

Photo DHN students and staff attend 10th Universities Fighting World Hunger Summit
Nine students and one staff member from the Department of Dietetics and Human Nutrition recently attended the 10th Universities Fighting World Hunger Summit. The summit held February 20-22, 2015 at the University of Guelph in Guelph, Ontario, Canada, focused on the interactive roles the community, business, academia and education can play in fighting hunger around the globe.

Phi U welcomes new initiates
The Iota Chapter of Phi Upsilon Omicron welcomed six new initiates on March 2, 2015. Seated on the first row (from left to right) are new initiates Caitlin Brown, Heidi Olson, Emma Rhodes, Rachel Rose, Britney Thomas and Michaela Mineer. Avery is an alumnus of the department, holding both a Bachelor of Science and Master of Science in Merchandising, Apparel and Textiles.

Since August 2014, six new Family and Consumer Sciences Extension Agents have joined the University of Kentucky Cooperative Extension Service, serving in Carroll, Edmonson, Knox, Livingston, Menifee and Monroe counties.

Photo Stephenson co-authors textbook
Congratulations to Dr. Tammy Stephenson, Assistant Professor in the Department of Dietetics and Human Nutrition on the publication of Human Nutrition: Science for Healthy Living. The first edition textbook, co-authored with Wendy Schiff, is targeted to introductory classes for students majoring in nutrition, dietetics and health science professions.
